With a super strong wok hei (read: breath of the wok) due to the chef’s excellent control of fire and years of experience under his belt, this wah tan hor activates our 6th taste note, umami.
Using his own homemade broth instead of water or ready-made broth, the chef is able to control the taste profile and ingredients that go into it.
The other secret about their hor fan is they use fresh prawn that comes daily to their stall every day. The whole prawn and tail are still intact to give the dish that extra burst of umami flavor.

Uncommonly served at Tze Char, Mee Sua is their ideal choice of staple due to the way the noodle absorbs the broth.
Used on fresh seafood and simmered for over 6 hours, this soup is super thick with goodness paired with the al dente mee sua. This is a must-order!
The last dish I highly recommend would be their 3 Treasure Pot Nyonya Style.
As the name suggests, 3 treasures refer to the 3 main ingredients they use! Sea Grouper, Prawn, and Squid. With the nyonya paste made from scratch, they are able to create a super delish thick base that coats each and every ingredients completely!
